Zucchini Pizza Boat Ingredients
- 4 medium zucchini
Pizza Sauce
- ½ cup tomato paste
- 1 tsp dried oregano
- ½ tsp dried thyme
- 1 tsp raw honey
- ⅓ cup water
- Salt & pepper (optional)
Toppings
- ¼ cup thinly sliced onion
- ½ cup cherry tomatoes, halved
- ¼ cup olives (oil-free and citric acid–free), pitted and halved (optional)
- 4–5 sun-dried tomatoes, roughly chopped
- ¼ cup diced red bell pepper
- 4 button mushrooms, thinly sliced*
- 1 tsp red pepper flakes (optional)
- ¼ cup thinly sliced fresh basil, to serve
Directions
- Preheat oven to 400°F/200°C. Line a baking sheet with parchment paper.
- Trim ends off each zucchini and cut in half lengthwise. Scoop out the center flesh to form a cavity. Place cut side up on baking sheet.
- Mix pizza sauce ingredients in a bowl. Divide sauce between zucchini halves.
- Add toppings to each zucchini boat in your preferred combinations.
- Bake for 20–25 minutes until zucchini is tender but not mushy.
- Sprinkle with fresh basil and serve warm.
*Wash mushrooms thoroughly with warm water before slicing. Avoid slimy or decaying mushrooms.
